What to eat with red wine: Easter 2024!

Easter is fast approaching, and our 2011 will be uterly sensational with a seven hour slow cooked leg of lamb. Or of course a plant based equivalent

Slow-cooking this lamb dish in the oven ensures tender, succulent results over the course of seven hours, reducing the risk of burning compared to stove-top cooking.

Serves: 8 Preparation

Time: 1 hour

Cooking Time: 7 hours

Ingredients:

  • 1 leg of lamb (approximately 2.5kg)
  • 50g unsalted butter
  • 100ml grapeseed oil
  • 500g carrots, peeled and sliced
  • 500g onions sliced
  • 5 garlic cloves sliced
  • 80g plain flour
  • 2 tbsp honey
  • 500ml water
  • 2 litres red wine
  • 1 litre veal stock
  • 2 tbsp redcurrant jelly (optional)
  • Fleur de sel and freshly ground black pepper

Instructions:

Preheat the oven to 150°C (300°F/gas mark 2). Season the leg of lamb with salt and pepper. In a cast-iron casserole dish, heat the butter and oil over medium heat. Sauté the lamb for 5 minutes on each side until golden brown. Add the carrots, onions, and garlic to the casserole dish with the lamb. Sprinkle the flour lightly over the ingredients, then add the honey, water, red wine, and veal stock. Stir well to combine. Bring the mixture to a boil, skimming off any foam that rises to the surface. Transfer the casserole dish to the preheated oven and cook for 7 hours. Once cooked, remove the dish from the oven. Transfer the lamb to a serving platter and let it rest while you prepare the gravy. Reduce the gravy on the stove over medium heat, adjusting the consistency and sweetness as needed. Taste for seasoning and adjust accordingly. Serve the slow-cooked leg of lamb with grilled vegetables if desired, and pour the red wine gravy over the top.
